Features

Tara gum is a stabilizer, gelling and thickening agent of 100% natural origin.

It is obtained from the ground endosperm of Tara seeds (Caesalpinia Spinosa) by thermal and mechanical procedures. It is chemically composed of polysaccharides, mainly galactomannans of high molecular weight.

Applications:

  • In the food industry it is used as a thickener and stabilizer for the preparation of instant soups and condiments in powder or liquid form; in the preparation of ketchup, mustard, mayonnaise, etc.
  • In the dairy industry it is used for the preparation of yogurts, ice cream and desserts.
  • In the bakery industry, as a dough conditioner, it provides softness, improves texture and retains moisture, prolonging the shelf life of the products.
  • In the elaboration of sausages, confectionery, drinks, cereals, and dietetic products.
  • In the oil drilling industry, Tara gum is an excellent additive to drilling mud. Used in well workings, it is necessary as an integral part of fracture fluid formulations for oil and gas production.
  • It is also used in the pharmaceutical and cosmetic industries.
