Natural Enology

In enology, the tannins are elaborated according to the specifications that the regulatory institutes of the wine activity of each country establish. These enological tannins are used for the clarification of wines and also to improve their taste characteristics after a few months' cultivation in the vat. Nowadays, these preparations represent an important role in the industry of enological products and the viticultural activities.

Tannins confer specific gustatory characteristics grouped under the term astringency. Astringency is defined as the sensation caused on the tongue by the formation of complexes between the tannins and the glycoproteins in the saliva. Another advantage is that it forms complexes with the proteins, participating in the protection of the tissues against microbiological aggressions. It also has anti-radicalary power and capacity to consume dissolved oxygen; in this case it has antioxidant properties beneficial to the enological field.

The quality of the enological tannins is given by its richness in total polyphenols but also by the point of its active principles, that is to say in the specific characteristics of our product.

Thanks to a blend of selected woods, UNITAN has managed to extract the right tannins to confer the above mentioned properties. The taste properties of the enological tannins represent one of its main characteristics. Each variety of enological tannin confers different gustatory characteristics to the wines, with the common denominator of astringency according to the nature of the tannin. This is one of the most important organoleptic properties of the tannins, as it is what gives the character to the wines, defining their suitability to accompany different types of food.
